What to do:
1. Cook quinoa according to its package directions. Remove from heat.
2. Spoon quinoa into 4 bowls. Top each with tomatoes, corn, avocado, green onion and cilantro.
3. Lightly spray a large skillet with cooking spray. Cook the eggs uncovered for 3-4 minutes, until the egg whites are set.
4. Place an egg onto each bowl and season with pepper. Enjoy!

This Southwestern inspired bowl makes for an 'egg-cellent' breakfat- full of protein and healthy fats!
What you will need:
- 1/4 cup uncooked quinoa, rinsed and drained
- 2 medium tomatoes, chopped (~2 cups)
- 1 cup frozen corn
- 1/4 cup green onion, chopped
- 1/2 cup cilantro, chopped
- 4 eggs
- 1/4 tsp. pepper
