- Preheat oven to 375 degrees F.
- Drain and rinse beans. Dry beans and place into a ziplock bag to mash.
- Chop red bell pepper, onion and garlic into small pieces.
- In a large bowl, combine mashed beans, chopped pepper, onion, garlic and remaining ingriendents.
- Form mixture into 6-8 patties.
- Place on a sprayed baking sheet and bake for 15 minutes.
- Serve on a wheat roll with sliced red onion, tomato and a piece of bib lettuce.
- Optional: top with 2 Tbsp. homemade guacamole.
