1 loaf with 1/2 cup potatoes

What to do:
- Preheat oven to 350F.
- Mix all meatloaf ingredients together in a large bowl.
- Divide evenly into 6 loaves.
- Spray cooking sheet with nonstick spray.
- Spread each meatloaf with 1 Tbsp. ketchup.
- Bake for 25 minutes or until internal temperature reaches 165F.
- While meatloaves are baking, peel potatoes and cut into 1/4's.
- Boil in large pot with chicken broth and 1 cup water for 15 minutes.
- Drain potatoes and reserve 3 Tbsp. of broth.
- Put potatoes back into pot and mash with milk, olive oil and broth.
- Enjoy!
