What to do:
- Preheat oven to 375F.
- Cut the bell peppers in half lengthwise, and remove all seeds. Place peppers cut side up into a baking dish or a rimmed tray.

Heat olive oil in a large pan over medium heat. Sauté onion until soft, add in garlic and cook for another minute.

Add ground turkey into pan for about 6 minutes or until no longer pink. Stir in cooked brown rice, diced tomatoes, tomato paste, oregano, and paprika.Cook for about 4-5 minutes.

Stuff each pepper with mixture and bake in oven for 12 minutes. Remove from oven and top each pepper evenly with cheese and bake for 5 more minutes.

Top with parsley or cilantro and enjoy!
