What to do:
- Preheat oven to 400F.
- In a large bowl, add sweet potatoes and drizzle with 1 Tbsp. olive oil. Season with salt and black pepper.
- Spread sweet potatoes on a baking sheet lined with parchment paper. Bake for 10 minutes or until outsides are softened.
- In a separate bowl, add chicken, 1/3 Cup Greek yogurt, and ½ seasonings. Mix well to combine.
- In the same bowl as potatoes, add bell peppers, yellow squash, and any additional produce desired.
- Add in remaining seasonings.
- Transfer chicken and veggie mix to sheet pan with sweet potatoes. Spread evenly.
- Bake for 15-20 minutes, stirring halfway through until chicken reaches 165F.
- Mix sauce ingriedients together in a small bowl.
