What to do:

  1. Marinade:
  2. In a medium bowl, combine garlic, ½ cup olive oil, orange juice, lime juice, cumin and oregano
  3. Season with salt and pepper and whisk to combine
  4. Reserve about ½ cup of the marinade to use later
  5. Add shrimp and scallops to marinade and toss until combined
  6. Cover and refrigerate for 15 minutes
  7. In a large skillet over medium heat, add enough olive oil to coat the bottom of the skillet
  8. When the oil is simmering, add shrimp in a single layer
  9. Sear until the shrimp is pink on the bottom, about 2 minutes
  10. Flip shrimp and cook for one more minute
  11. Repeat process in steps 3 and 4 with the scallops
  12. Add the reserved marinade and bring liquid to a simmer
  13. Simmer shrimp and scallops in marinade for one minute
  14. Remove from skillet heat and stir in chopped cilantro
  15. Serve immediately over rice noodles

Mojo Shrimp and Scallops with Rice Noodles

Mojo Shrimp and Scallops over Rice Noodles is a Mexican inspired version of Spaghetti Aglio e Olio. Rice pasta is tossed in Mojo de Ajo (garlic oil), topped with shrimp and scallops, cumin, pepper and cilantro.

What you will need:

  • 7 cloves garlic, finely minced
  • Extra virgin olive oil
  • 1/3 cup fresh orange juice
  • 1/3 cup fresh lime juice
  • 1 tsp. ground cumin
  • ½ tsp. dried oregano
  • Freshly ground black pepper
  • ½ lb. shrimp, peeled and deveined
  • ½ lb. fresh scallops
  • Kosher salt
  • ¼ cup chopped cilantro
  • Cooked rice noodles – 8oz uncooked=1 serving
