What to do:
- In a saucepot add 2 Tbsp. olive oil and bring to medium heat. Add-in 2 Tbsp. garlic and kale and sauté for 2 minutes.
- Add rice and stir for 1 minute.
- Add water and bring to a boil, then turn heat to low and let simmer for about 20 minutes.
- While rice is cooking, cut chicken breast into 1 inch cubes.
- On a frying pan add 2 Tbsp. olive oil and bring to medium heat.
- Add chicken and sear on all sides, then add-in remaining garlic, lemon juice, broth, and honey.
- Cook until sauce gets thick and chicken is 165°F.
