What to do:

Grilled Vegetables with Harissa dressing are a spicy, slightly sweet vegetable medley that makes a great side for protein of meat, fish, tofu or beans!

What you will need:
- ¼ cup extra virgin olive oil
- 2 Tbsp. fresh lemon juice
- 2 tsp. harissa powder
- 1 red bell pepper, quartered, seeded
- 1 ½ pound yellow squash, trimmed, cut crosswise into ½ inch thick rounds
- 4 medium zucchini, halved lengthwise, then crosswise
- 2 large carrots, peeled, trimmed, cut ½ inch thick slices
- 3 large red onions, sliced in ½ inch discs
- 3 Tbsp. chopped fresh cilantro
- Lemon wedges (for garnish)
