Lemon Garlic Salmon with Roasted Asparagus

1 filet and 1/2 bunch asparagus

What you'll need:
  • 2 salmon fillets
  • 1 bunch asparagus, trimmed
  • 1 Tbsp. olive oil
  • 2 garlic cloves, minced
  • 1 Tbsp. lemon juice
  • pinch of pepper
  • Lemon slices
What to do:
  1. Preheat the oven to 400°F.
  2. Place the salmon fillets and asparagus on a baking sheet. Drizzle with olive oil, minced garlic and pepper.
  3. Roast for 15-18 minutes until the salmon's internal temperature is 145F. 
  4. Squeeze lemon over the salmon and garnish with fresh parsley and additional lemon slices.
  5. Serve with a side of quinoa or brown rice for a healthy whole grain.
