Zucchini and Edamame Fritters with Tzatziki Sauce

What you'll need:

Fritters

  • 2 Tbsp. extra virgin olive oil
  • 1 cup edamame beans, shelled, defrosted
  • 1 zucchini, medium, shredded, squeezed excess water out
  • 4 Tbsp. whole wheat flour
  • 1 egg
  • ½ tsp. onion powder
  • ½ tsp. garlic powder
  • dash of red pepper flakes
  • salt & pepper to taste
  • 1 stalk green onion, diced, optional

Tzatziki Sauce

  • ½ cup English cucumber, grated
  • 1 cup plain, nonfat Greek yogurt
  • 2 garlic cloves, minced
  • 1 Tbsp. fresh dill, chopped
  • ¼ tsp. lemon zest
  • 1 lemon, juiced
  • salt & pepper to taste
  • 1 tsp. olive oil, optional
What to do:

Fritters

  1. Add edamame, shredded zucchini, flour, egg, spices, and green onion into a food processor/blender. Blend until smooth to make a batter. Drain excess fluid as needed.
  2. Use zucchini batter to form a patty (~3 Tbsp.) using your hands. Add additional flour to thicken the batter if the patty does not form.
  3. Add 2 Tbsp. olive oil to a large skillet over medium-high heat.
  4. Once oil is hot, place patties into pan. Do not overcrowd pan.
  5. Cook both sides until firm and golden brown.

Tzatziki Sauce

  1. Squeeze out excess water from cucumber.
  2. In a medium bowl, combine cucumber, yogurt, garlic, dill, lemon zest and juice, and salt until well mixed.
  3. *Optional: Drizzle olive oil on sauce.
