Chocolate Chia Pudding Mousse

What you'll need:
- 4 Tbsp. dried chia seeds
- 3 Tbsp. cocoa powder
- 1 tsp. vanilla extract
- 2 Tbsp. maple syrup
- 1 ½ cups soy milk (or milk of choice)
- ¼ tsp. salt
- 6 fresh strawberries
What to do:
- Slice strawberries lengthwise into thin slices and place each slice along the inside of a serving glass. Repeat this process for all serving glasses until finished. Set it aside.
- In a blender, add chia seeds, cocoa powders, vanilla extract, maple syrup, milk of choice, and a pinch of salt. Blend on high speed until mixture is completely smooth and creamy. This takes about 1-2 minutes.
- Transfer the blended mousse into individual serving glasses. (Optional: Garnish with additional strawberries.)
