What you'll need:
  • 1 1/2 Tbsp. olive oil
  • 1 medium onion, chopped
  • 20 oz. lean ground turkey
  • 2 garlic cloves, minced
  • 1/2 tsp. garlic powder
  • 2 tsp. chili powder
  • 1/2 tsp. cumin
  • 1 15.5 oz. can no-salt-added pinto beans, rinsed & drained
  • 1 15.5 oz. can no-salt-added black beans, rinsed & drained
  • 1 14.5 oz. can no-salt-added diced tomatoes, undrained
  • 1 3/4 cups no-salt-added chicken broth
  • 1 cup frozen whole-kernel corn
  • 1 6 oz. can no-salt-added tomato paste
  • 4 medium green onions (green part only), sliced
What to do:

1. In a large pot, heat oil over medium-high heat. Cook chopped onion for about 3 minutes, until soft.

2. Reduce heat to medium. Stir in turkey and cook for 5 minutes, until browned. Stir frequently to break up the turkey.

3. Stir in the remaining ingredients, except the green onion. Cook 5-7 more minutes until everything is heated through, stirring frequently. Sprinkle green onion just before serving. Enjoy!
