What you'll need:
- 1 lb ground lean chicken
- 1 15 oz jar salsa
- 1/4 cup shredded Mexican-blend cheese, low fat
- 1 can black beans, rinsed and drained
- 1 red bell pepper, chopped
- 1 poblano pepper, chopped
- 1 can corn, drained
- 1 serrano pepper, sliced
- 1 tomato, chopped
- 1 avocado, chopped
- 1/4 cup chopped cilantro
What to do:
- Cook the ground chicken in a medium fry pan until cooked through.
- Once cooked, drain off fat and stir in 3/4 cup of salsa.
- Top with the remaining ingredients. Serve with blue corn tortilla chips or over a bed of cauliflower rice.
