Roasted Corn Salsa

What you'll need:
- 6 ears corn
- 3 red onion
- 4 red bell peppers
- 12 oz. cilantro
- 2 oz. lime juice
- 1 tsp. salt
- 1 tsp. pepper
- 1 tsp. garlic powder
- 1 tsp. crushed red pepper
- 2 15 oz. cans of black beans (unsalted) and rinsed
What to do:
- Peel and clean all veggies
- Strain and rinse beans
- Cut onions in 1/3, like big onion rings
- Heat grill pan on high
- Grill corn, red peppers, and red onion
- Get a nice char on all sides but try not to burn to the point where the vegetables skin starts to peel off
- Take veggies off the grill, let cool so you can handle cutting them
- Slice corn off the cobb
- Dice peppers and onions, chop cilantro
- Combine all ingredients into mixing bowl, toss and season accordingly
- Refrigerate until ready to serve
